The Best Ever Waffle Recipe
If you are anything like me, rushing out the door in the mornings calls for quick and easy breakfasts for toddlers. I have been so guilty of throwing dry cereal in a cup with a Go-Gurt and container of fruit…(and this still happens more times than not), but I recently stumbled upon the best ever waffle recipe in one of my old cookbooks. Hattie loves them with plain, old syrup, and I love them with PB and banana slices on top. I couldn’t not share this wonderful gold-mine.
Quick Breakfast Ideas for Toddlers
So let me spill the secrets on how this becomes a quick and easy breakfast. Hattie and I make the batch on the weekends. This is the perfect time for us to bond and build our relationship as we work together to mix up the waffles. Sharing my love for cooking with her has become one of my favorite things. Then, I store the leftover mix in my very favorite Zip Top Containers. The easy closure on top keeps the batter in the fridge for a couple of days. (These work perfect for on-the-go snacks and breakfasts, as well….LOVE them!)
During the week, I’ll pull out the mini-waffle iron (…another must have!), and voila, quick and easy breakfast that Hattie will actually eat. I have tried making a large batch of waffles on the weekends and freezing them to reheat during the week, and it does work, but these waffles are out-of-this-world delicious when they are fresh and crispy.
